Cheese Dip on Steroids !

Well, not really on steroids, but definitely over-the-top and hearty enough to be a main dish!  It's what's for dinner at our house tonight. I serve it with chips, rice, and whatever condiments you like with spicy southwestern food (jalapeno peppers, sour cream, taco sauce, etc).

Here goes! 
P.S. - this is not for someone who is watching calories. It is super rich!

In your crock pot:
Dump in 2 eight ounce bricks of cream cheese, two pounds of Velveeta cheese (cubed), two cans of diced tomatoes with green chilies, and one large can of black beans.  Add one pound of chicken that has been cooked and diced.  Cover and let cook on low for 5-6 hours (until all is melted together).  Stir and serve!  This is awesome with chips, tortillas, over rice, in lettuce wraps, or just by itself.

You can get really creative with this. If you like onion, chop some up and add it in.  If you like bacon, try adding some cooked and crumbled bacon. The sky's the limit!
